For National Pralines Day, I searched everywhere for a gluten-free, dairy-free, refined sugar-free and vegan pralines recipe. Unfortunately, there were NONE!
I finally decided to pick one that would be easy to manipulate and replace the ingredients with allergen-friendly ingredients to create this vegan recipe.
The problem I encountered is that the pralines didn’t harden, which is common even with reviews of existing recipes posted online. It could be that I have turned the fire off under the mix a bit earlier than I should’ve.
Feel free to share your thoughts on this and how we can enhance the recipe.
But the mix was SO good that I poured it into a bowl and indulged in liquid vegan pralines. *drools*
Vegan Pralines Recipe
- 2 cups coconut sugar
- 3/8 cups coconut oil
- 1 cup unsweetened coconut milk
- 1 cup hazelnut
- 1/2 cup almonds
- 1 tsp vanilla extract
- Line a baking sheet with aluminum foil.
- In a large saucepan over medium heat, combine all ingredients. Heat to between 234 and 240 degrees F (112 to 116 degrees C).
- Drop by spoonfuls onto prepared baking sheet. Let cool completely.
